The Very Best Oatmeal Ice Box Cookies

1 cup shortening
1 cup white sugar
1 cup brown sugar
2 eggs, beaten
1 teaspoon vanilla
1 teaspoon soda
1 teaspoon salt
1-1/2 cups flour
3 cups oats
1/2 cup coconut
1/2 cup chopped nuts

Cream shortening and sugars; add eggs and vanilla and mix well. Add dry ingredients and mix well. Add oats, coconut and nuts and mix. Chill overnight.
Form dough into rolls. Slice 3/8-inch thick and bake at 350 degrees for 10 to 12 minutes. Makes crisp cookies.
