Zucchini Bread

Ingredients

3 eggs
1 cup oil
2 cups sugar
2 cups shredded zucchini
2 teaspoons vanilla
3 cups flour
1 teaspoon baking soda
1/4 teaspoon baking powder
1 teaspoon salt
3 teaspoons cinnamon
1/2 cups nuts (optional)

Instructions

Beat eggs and oil; add sugar, zucchini and vanilla. Sift dry ingredients. Add dry ingredients to zucchini mixture. Add nuts if desired. Pour into two greased loaf pans. Bake at 325 degrees for 1 hour.
