Pickled Mushrooms

Ingredients

2/3 cup wine vinegar
1-1/3 cups olive oil
2 tablespoons chopped parsley
2 tablespoons lemon juice
1 teaspoon salt
1 teaspoon pepper
1 teaspoon sugar
3 or 4 cloves garlic, crushed
1 pound mushrooms, washed and dried

Instructions

If mushrooms are large, cut in half. Combine all ingredients into a large jar. Shake well. Marinate two or three days at room temperature. Do not refrigerate. Very good.
