Zucchini Bread

Makes 2 nice loafs.

Ingredients

3 eggs
1 cup vegetable oil
2 cups sugar
2 cups grated zucchini
3 teaspoons vanilla
3 cups flour
1 teaspoon salt
1 teaspoon soda
3 teaspoons cinnamon
1/4 teaspoon baking powder
1/2 cup nuts (optional)

Instructions

Beat eggs until light and foamy. Add oil, sugar, zucchini and vanilla. Mix lightly, but well, by hand. Add flour, salt, baking soda, cinnamon, baking powder and nuts. Stir until well mixed. Pour into 2 loaf pans. Bake 1 hour at 350 degrees.
