Lemon Crumb Muffins

This makes a large batch, approximately 40 muffins.

Ingredients

6 cups flour
4 cups sugar
3/4 teaspoon baking soda
3/4 teaspoon salt
8 eggs
16 ounces sour cream
2 cups butter, melted
3 tablespoons grated lemon peel
2 tablespoons lemon juice
Topping:
3/4 cup flour
3/4 cup sugar
1/4 cup cold butter, cubed
Glaze:
1/2 cup sugar
1/3 cup lemon juice

Instructions

In a large mixing bowl combine flour, sugar, baking soda and salt. In another bowl combine eggs, sour cream, butter, lemon peel and juice. Stir into dry ingredients just until moistened. Fill muffin tins 3/4 full. In a small bowl combine topping ingredients, cutting in butter. Sprinkle over muffins. Bake at 350 degrees for 20 to 25 minutes. Cool 5 minutes. Whisk together glaze ingredients. Drizzle over warm muffins.

1964 -- 50 years ago: WVIK-FM, noncommercial educational radio station at Augustana College, will return to the air tomorrow. The station operates at a power of 10 watts at 90.9 megacycles on the frequency modulation band. The station is operated with a staff of 92 students.
1989 -- 25 years ago: An avenue of lights, 13 Christmas trees strung with more than 44,000 sparkling lights, will expand the Festival of Trees beyond the walls of RiverCenter in downtown Davenport in mid-November.
