Honey Sweet Potato Biscuits

These go great with soups and stews or you can use them as a breakfast entree. They are easy to do and taste really good.

Ingredients

1 cup plus 3 tablespoons all-purpose flour
3/4 cup whole wheat flour
1/2 cup toasted wheat germ
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/4 cups buttermilk
2/3 cup mashed sweet potato
1/4 cup butter, melted
2 tablespoons honey

Instructions

Preheat oven to 400 degrees. Grease a baking sheet. In a large bowl, combine flours, wheat germ, baking powder, baking soda and salt. In another bowl, whisk buttermilk, sweet potato, butter and honey. Stir into dry ingredients just until moist. Turn onto a lightly floured surface and knead 8 to 10 times. Pat or roll dough out to 3/4-inch thickness. Cut with floured 2 1/2-inch biscuit cutter. Place 2 inches apart on a greased baking sheet. Bake at 400 degrees for 15 to 20 minutes or until golden brown. Serve warm. Makes 10 biscuits.
