Sweet Potato Pie

Ingredients

2 eggs
3/4 cup evaporated milk
1/2 cup plus 2 tablespoons sugar
6 tablespoons butter, melted
1 teaspoon cinnamon
1 teaspoon pumpkin pie spice
1/2 teaspoon vanilla
1/2 teaspoon lemon extract
1/4 teaspoon salt
1/4 teaspoon nutmeg
2 cups cooked, mashed sweet potatoes
1 9-inch unbaked pastry shell

Instructions

Combine eggs, evaporated milk, sugar, melted butter, cinnamon, pumpkin pie spice, vanilla, lemon extract, salt and nutmeg in a large mixing bowl; mix well. Beat in sweet potatoes. Pour into pastry shell. Bake at 425 degrees for 15 minutes. Reduce heat to 350 degrees. Bake an additional 30 to 35 minutes or until a knife comes out clean.
