Pumpkin Cookies

Comment on this recipe

This pumpkin cookie is easy to make and if you want you can put glaze on each cookie after it cools or just eat them without the glaze. They are good both ways. I put maple icing on my cookies.

Ingredients

3 cups sugar
5 cups flour
3 teaspoons baking soda
3 teaspoons cinnamon
1 1/2 cups vegetable oil or shortening
3 teaspoons vanilla
3 tablespoons baking powder
3 cups pumpkin, from a can
1 cup chopped nuts
1 cup raisins

Optional maple icing:
1/4 cup butter, softened
2 1/4 cups powdered sugar
1 teaspoon maple flavored extract
3 to 4 teaspoons milk

Instructions

Mix together sugar, flour, baking soda, cinnamon, vegetable oil, vanilla, baking powder and pumpkin. Add nuts and raisins. Drop by spoonful on ungreased cookie sheet. Bake at 325 degrees for 15 minutes. Makes 6 dozen cookies.

Optional maple icing: Cream butter in medium bowl with electric mixer or wooden spoon; gradually add powdered sugar. Stir in maple extract and enough milk to make icing spread easy.
