Cheesy Potato Crisps

Ingredients

1/4 cup (1/2 stick) oleo
4 medium potatoes
Salt and pepper to taste
1 1/2 cups shredded Italian cheeses
2 cups crushed crispy rice cereal

Instructions

Melt oleo in a jelly roll pan. Slice potatoes into 1/4-inch slices lengthwise. Arrange in a single layer in the pan, turning the slices to coat on both sides. Sprinkle with salt, pepper and then cheese. Top with crushed cereal. Bake at 375 degrees for 20-25 minutes.
