I got this recipe for a great Cambridge cook, Mary Bowman

Ingredients

2 cups sugar
1 cup oil
3 eggs
2 cups flour
1 teaspoon salt
1 teaspoon soda
1 teaspoon cinnamon
3 cups finely chopped apples
1 teaspoon vanilla
1 cup nuts (optional)

Instructions

Mix sugar, oil and eggs. Add flour, salt, soda and cinnamon. Mix well. Add apples and vanilla (and nuts). Mix well. Pour into 2 greased loaf pans. Sprinkle with sugar and cinnamon. Bake for 1 hour at 325 degrees.

1989 -- 25 years ago: Fort Armstrong hotel once the wining and dining chambers of Rock Island's elite is under repair. Progress is being made though at a seeming snail's pace to return the building to a semblance of its past glory for senior citizen's homes.
