Apple Bread

I got this recipe for a great Cambridge cook, Mary Bowman

2 cups sugar
1 cup oil
3 eggs
2 cups flour
1 teaspoon salt
1 teaspoon soda
1 teaspoon cinnamon
3 cups finely chopped apples
1 teaspoon vanilla
1 cup nuts (optional)

Mix sugar, oil and eggs. Add flour, salt, soda and cinnamon. Mix well. Add apples and vanilla (and nuts). Mix well.
Pour into 2 greased loaf pans. Sprinkle with sugar and cinnamon.
Bake for 1 hour at 325 degrees.
