Our Favorite Banana Nut Muffins

2 1/2 cups flour
1 1/4 cups sugar
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon soda
1/2 cup shortening
1 cup ripe bananas (3 large bananas)
1/2 cup sour milk (to sour milk: 1 tablespoon vinegar to 1/2 cup milk...let stand 5 minutes)
1 teaspoon vanilla
1 cup walnuts
Sift together flour, sugar, baking powder, salt and soda in large mixing bowl. Add shortening, eggs and bananas.
Beat 2 minutes on low speed; add sour milk and vanilla. Beat 2 minutes longer. Add walnuts. Spoon the batter into cupcake tins (about 2/3 full) and bake for 20-25 minutes or until toothpick comes out clean.
