Tangerine Sweets

This dish goes well with a salmon loaf dish.

Ingredients

6 cooked sweet potatoes
48 tangerine sections
1 8-ounce jar honey
Parsley

Instructions

Peel and slice each sweet potato lengthwise into 4 slices and put in a 9x13x2-inch shallow baking dish or pan. Arrange 2 tangerine sections on each potato slice, cover with honey and bake in preheated 350-degree oven for 30 minutes or until heated through. Garnish with parsley. Makes 6 servings.
