Betty's Cranberry Muffins

We tried many cranberry muffin recipes from four different cranberry cookbooks and have found this one to be our favorite. It was taken from the Wisconsin Cranberry Growers' Favorites. But then again, may mom liked it because it is called Betty's Cranberry Muffins.

2 cups flour
1 cup sugar
1-1/2 teaspoons baking powder
1 teaspoon salt (may be omitted)
1/2 teaspoon baking soda
1 teaspoon grated orange peel
1/4 cup margarine or butter
1 egg, beaten
3/4 cup orange juice
1-1/2 cups chopped cranberries

Sift together flour, sugar, baking powder, salt, baking soda and orange peel. Cut in margarine until crumbly. Add egg and juice. Mix until moist. Fold in cranberries. Bake at 350 degrees for 25-30 minutes (may take longer depending on oven). Makes 12-15 muffins.
