Coconut Chicken Breasts

Ingredients

2/3 cup Bisquick mix
2/3 cup flaked coconut
1/2 teaspoon salt
1/2 teaspoon paprika
1/2 cup Eagle Brand sweetened and condensed milk
2 teaspoons Dijon mustard
4 boneless chicken breast halves
Nonstick cooking spray
1/2 cup melted margarine

Instructions

Preheat oven to 350 degrees F. Mix Bisquick, coconut, salt and paprika and set aside. Mix milk and mustard and dip chicken into mixture, then into Bisquick. Place in a sprayed 9x13-inch pan. Drizzle with melted margarine. Bake uncovered for 35 minutes until chicken is cooked through.
