Roasted Potato Casserole

Ingredients

1 cup sour cream
1-ounce envelope ranch salad dressing mix
7 medium (size B) potatoes, unpeeled and cut into 1/2-inch cubes
1/4 cup butter or oleo
1 cup (8 ounces) Cheddar cheese

Instructions

Combine sour cream and ranch dressing mix and refrigerate. Place potatoes in a greased, 9x11x7-inch baking dish and dot with butter or oleo. Cover and bake at 325 degrees F. 60-65 minutes or until potatoes are tender. Spoon sour cream mixture over potatoes; sprinkle with cheese and bake uncovered 5-10 minutes or until cheese melts. Serves 8.
