Miniature Cherry Cheesecake

Makes 18 cakes.

Ingredients

Vanilla wafer cookies
2 8-ounce packages cream cheese
1/2 cup sugar
2 eggs
1 teaspoon vanilla
1 can cherry pie filling

Instructions

Preheat oven to 375 degrees F. Put liners in muffin tins and place a vanilla wafer in the bottom of each liner. In a bowl, blend the cream cheese, sugar, eggs and vanilla. Fill muffin cups 2/3 full and bake 15 minutes. Cool 1 hour, then chill. Put 1 teaspoon pie filling with 3 cherries in each cup before serving.
