Zucchini Bread

3 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
2 cups sugar
2 teaspoons vanilla
1 cup oil
3 eggs, beaten
3 cups grated zucchini
1 teaspoon cinnamon
1/2 cup nuts

Sift flour, baking powder, baking soda and salt. In a separate bowl, mix sugar, vanilla, oil and eggs. Stir in dry ingredients, zucchini, cinnamon and nuts. Pour into two greased loaf pans and bake for 1 hour at 325 degrees.
