Banana Oatmeal Muffins

2/3 cup pureed banana
1 egg, beaten
1/2 cup sugar
1/4 cup milk
1/4 cup vegetable oil
1 teaspoon vanilla
1 cup flour
1 cup quick-cooking oatmeal
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup butterscotch chips, optional

Mix together banana, egg, sugar, milk, oil and vanilla. In large bowl, combine the flour, oats, baking powder, baking soda and salt. Stir banana mixture into the dry ingredients with the butterscotch chips until just blended. Spoon into well greased 2-1/2-inch muffin cups. Bake at 400 degrees
12-15 minutes. Makes 10-12 muffins.
