Poppy Seed Lemon Bread

This is a very moist bread and freezes well. Mini loaf pans can also be used.


1 package (3 ounces) lemon instant pudding
1 box lemon cake mix
4 eggs, beaten
1/2 cup oil
1/4 cup (scant) poppy seeds
1 cup boiling water


Beat all ingredients for 4 minutes. Pour into 2 greased loaf pans. Bake at 350 degrees for 35-40 minutes.
