Stay Soft Oatmeal-Raisin Cookies

Ingredients

1 cup raisins
3/4 cup water
1 teaspoon baking soda
2 cups flour
1 teaspoon cinnamon
1 cup sugar
1 teaspoon vanilla
1 cup butter
2 eggs
2 cups oats

Instructions

Simmer raisins in water for 5 minutes. Measure 5 tablespoons of the liquid and combine with baking soda; drain the rest. Mix flour and cinnamon together and set aside. Beat sugar, vanilla, butter and eggs together; add flour and baking soda mixtures. Mix in oats. Drop by spoonsful onto greased cookie sheets. Bake at 375 degrees F. for 10 mins.
