Zucchini Pancakes

This recipe came from my sister who lives in Pennsylvania. You can freeze these pancakes to use later. Be sure your pan is hot with vegetable oil. Testing can be done by dropping some oil in pan. If it bubbles, you are ready to drop by spoonfull for pancakes.

3 cups shredded zucchini, squeeze out all the liquids and drain
1/2 cup chopped onion
1 cup Bisquick
1 egg
1 cup parsley

Mix all ingredients and fry in oil until brown on both sides.
