2 packages dry yeast
1/2 cup warm water
1/2 cup sugar
2 tablespoons caraway seed
2 eggs, slightly beaten
1/2 teaspoon baking soda
2 teaspoons salt
2 cups cottage cheese, heated to lukewarm
1-1/2 cups rye flour
2 or 3 cups of flour

In large bowl, dissolve yeast in warm water. Add sugar, caraway seed, eggs, baking soda and salt. Stir in cottage cheese. Gradually beat in flours, stirring well after each addition, until dough leaves sides of the bowl. Dough will be sticky. Cover; let rise in warm and draft-free place for one hour or until double in size. Punch down; divide into 24 well-greased muffin tins. Cover; let rise again, about 45 minutes. Bake in pre-heated 350-degree oven for 25 minutes or until golden brown.
