Easy Pot Roast and Veggies

Ingredients

3-4 pounds chuck roast
1 envelop dry onion soup mix
4 medium-sized potatoes, cubed
4 medium-sized carrots, sliced or 1 pound baby carrots
2 celery ribs, sliced thin, optional
3 cups water

Instructions

Before putting roast in cooker, sprinkle it with the dry soup mix, patting it on so it adheres. Put roast, potatoes, carrots and celery in slow cooker. Add remaining onion soup mix and water. Cover. Cook on low 6-8 hours. Variations: To add flavor to the broth, stir 1 teaspoon kitchen bouquet, 1/2 teaspoon salt, 1/2 teaspoon black pepper and 1/2 teaspoon garlic powder into water before pouring over meat and vegetables.
