Broccoli Bites

Ingredients

2 packages (10 ounces each) frozen chopped broccoli
2 cups crushed herb seasoned stuffing
1 cup grated Parmesan cheese
6 eggs, lightly beaten
1/2 cup butter or margarine, softened
1/2 teaspoon salt
1/4 teaspoon pepper

Instructions

Cook broccoli according to package directions; drain and place in a bowl. Add the remaining ingredients; mix well. Shape into 1-inch balls. Place in a greased 15x10-inch baking pan. Bake at 350 degrees for 10-12 minutes or until golden brown, or place in a single layer and freeze for up to 1 month. To use frozen appetizers, place in greased 15x10-inch baking pan and bake for 16-18 minutes or until golden brown. Yield: about 5 dozen.
