Chocolate Tofu Mousse

10-ounce package chocolate chips or carob chips
2 packages firm tofu
3 tablespoons honey or maple syrup
1/2 teaspoon vanilla, optional
1 teaspoon instant coffee granules, optional
Graham cracker crust, prepared

Heat chips in microwave until melted. Add honey and stir until smooth. In a blender or processor, blend tofu until smooth. Add the chocolate/honey mixture, anilla and coffee granules to tofu and whip until creamy.
Pour filling into a purchased graham cracker crust. Chill until firm. Slice and serve or chill and eat.
