Mincemeat Cookies

Ingredients

1 1/2 cups granulated sugar
3 eggs, well beaten
1 cup shortening
3-1/4 cups flour, sifted
1/2 teaspoons salt
1 teaspoon soda
1 package (9 ounces)mincemeat
1 apple, grated
1/2 cup cherries, chopped
1 cup chopped pecans

Instructions

Mix sugar and eggs together in large mixing bowl. Then add shortening. Gradually add dry ingredients (flour, salt, and soda). By hand, add mincemeat (broken into small pieces), apple, cherries, and nuts. Drop by teaspoon 2 inches apart on greased baking sheet. Bake at 400 degrees about 9 minutes. When cookies are done, they will be soft. Makes 7 dozen.
