Sausage-Cheese Balls

2 pounds sausage, uncooked
1-1/2 cups all-purpose baking/biscuit mix
4 cups shredded cheddar cheese
1/2 cup onion, finely chopped
1/2 cup celery, finely chopped
1/2 teaspoon garlic powder

Preheat oven to 375 degrees. Mix all ingredients and form into one-inch balls. Bake 15 minutes on ungreased cookie sheet or jelly roll pan until brown. Makes about 6 dozen. Sausage/cheese balls can be frozen uncooked.
For a firmer texture, add an extra 3 cups biscuit mix and 2 cups Cheddar cheese to the recipe.
