Stew Beef Casserole

The juice thickens and tenderizes the meat. The tapioca thickens the juices. Delish!

Ingredients

1 pound beef, cubed
3 carrots, peeled, cut up
3 stalks celery, cut into small pieces
1 large onion, chopped
4 potatoes, peeled, cut into wedges
1 tablespoon sugar
2 tablespoons tapioca
1 teaspoon salt
1/4 teaspoon pepper
1 cup V-8 juice (or tomato juice)

Instructions

Grease a 2-quart casserole dish lightly with margarine or spray it with cooking spray. Place cubed beef in casserole dish. Add carrots, celery, onion and potatoes. Sprinkle sugar, tapioca, salt, pepper and V-8 juice over all. Cover casserole and bake at 250 degrees for 4 hours.
