Spinach Souffle

I almost always serve this for holiday dinners because one of our sons (now age 37) has chosen spinach as his favorite vegetable all his life. The rest of the family enjoys this holiday tradition as well!

2 (10 ounce) package of frozen spinach, thawed and thoroughly drained
1 large container of small curd cottage cheese
6 tablespoons flour
1/2 pound American cheese, cubed (Velveeta)
1/4 pound margarine
6 eggs

Beat eggs, add cottage cheese, flour, cubed cheese and butter. Fold in spinach. Bake at 350 degrees for one hour ur until firm in center. Use a buttered two or two quart casserole dish. Serves 8.
