Laura's Low-Carb Cheesecake

3 packages (8 ounces each) cream cheese
1 cup sour cream
2/3 cup Splenda
1 teaspoon vanilla
3 eggs
Non-stick cooking spray (Pam)

Mix the cream cheese until creamy. Add the sour cream, vanilla and Splenda. Mix well. Add the eggs one at a time (not all at once), beating after each addition. Spray a 9-inch glass pie plate with Pam. Pour the cream cheese mixture into it. Place the pie plate into another dish (similar to a jelly roll pan) that has been filled with water. Bake at 375 degrees for approximately 40 minutes or until set and golden on the edges.
