Anderson's Split Pea Soup

1 pound bag split peas
1 onion, chopped
1 carrot, grated
Spice Island Beau Monde seasoning to taste
1 cup celery, finely chopped
Ham bone

Wash peas thoroughly. Cover peas with water and let soak over night or boil 30-45 minutes. Reserve soaking or cooking liquid. Add to soup pot with the rest of the ingredients and more water or broth if needed. Cook and cook and cook until thick. Remove ham bone and dice any meat left on the bone and return to the soup.
