Tortilla Roll-Ups

1-1/2 cups sour cream
8 ounces cream cheese
8-10 green onions
1 package (4 ounces) taco seasoning mix
1 can (2 ounces) green chiles, optional
1 tomato, chopped
1 cucumber, chopped
1 can (2 ounces) black olives, optional
1-1/2 cups shredded cheese
10-12 large flour tortillas
1 cup shredded lettuce

Blend the sour cream, cream cheese and taco seasoning together. Spread a thin layer on a tortilla shell, then layer lettuce, tomatoes, cheese, onions, chilis and the cucumbers and top with shredded cheese. Roll the tortilla shells tightly, chill in the refrigerator for an hour or so, then slice into 1-inch rolls. Place on a platter and serve.
