Veggie Sandwich Spread

We use this spread on bagels, all whole grain breads or pitas. Frequently serve with a homemade soup and some fresh, just to round out a real simply, filling, easy meal. Enjoy!

1/2 cup diced vegetables (combination of fresh carrots, green onions, broccoli, mushrooms and zucchini)
1 cup light ricotta cheese
2 teaspoons Dijon or any spicy mustard of your choice

Blend finely diced vegetables with the ricotta cheese and mustard. Keep refrigerated. Makes 1-1/2 cups.
