Peachy Cheesecake Muffins

Ingredients

1 large peach, cubed
2 cups flour
1 cup sugar
1 tablespoon baking powder
1 teaspoon salt
1/4 cup oil
3/4 cup milk
1 teaspoon vanilla
4 tablespoons melted butter
Dash of cinnamon
Filling:
8 ounces cream cheese
1 egg
1/2 cup sugar

Instructions

Preheat oven to 350 degrees. Peel and cut peach in 1/2-inch cubes. Sift together dry ingredients. Make a well in the center. Add butter, oil, milk and vanilla. Blend by hand. Fill muffin tins 1/2 full with batter. Add a tablespoon of filling and a few pieces of peaches. Top with remaining batter. Top each muffin with a dash of cinnamon. You may have leftover filling. Makes 12 muffins
