Ground Beef with Wine Sauce

1 carrot, diced
1 medium onion, chopped
2 cloves garlic, minced
2 ounces ground beef
3 tablespoons parsley, chopped
3 to 4 tablespoons butter
7 ounces dry red wine
5 ounces beef stock or bouillon
1 tablespoon cornstarch
4 (4 ounces) ground beef patties
4 slices of French bread sauteed in butter

Saute first 5 ingredients in butter over low heat for 10 minutes. Add wine and stock; simmer 10 minutes. Dissolve cornstarch in 2 tablespoons of water and add to mixture to thicken. Place beef patties which have been cooked to desired doneness on French Bread. Pour sauce over. Serves 4.
