Broccoli Cauliflower Salad

1 medium head cauliflower, broken up (about 7 1/2 cups)
1 medium bundle broccoli, cut up (about 4 cups)
2 cups seedless red grapes
6 scallions, sliced
2 cups shredded mozzarella
2 cups mayonnaise
1/4 cup grated Parmesan
2 tablespoons sugar
2 tablespoons vinegar
16 ounces bacon, cooked and crumbled

Put first 5 ingredients in a bowl. Combine mayonnaise, Parmesan, sugar and vinegar for dressing. Pour over ingredients in bowl and toss well. Chill at least 2 hours. Add bacon just before serving. Serves 8.
