Glorified Rice Pudding

Ingredients

2 cups cooked rice
2/3 cups white sugar
1 can (20 ounces) crushed pineapple, drained
1 teaspoon vanilla
1 cup mini marshmallows
2 cups Cool Whip
Optional garnish: nuts, coconut or maraschino cherries

Instructions

Mix cooled rice, sugar, pineapple and vanilla. Stir in marshmallows; fold in Cool Whip and chill. You may add nuts, coconut or maraschino cherries, if you wish.
