Tomato Salad

3 to 4 tomatoes, cored and cut in 3/4-inch cubes
1 small sweet onion, finely diced
2 tablespoons seasoned rice vinegar
1-1/2 teaspoons balsamic vinegar
2 teaspoons dried basil
Salt and pepper to taste


Combine tomatoes and onion. Add rice vinegar and balsamic vinegar. Mix lightly. Let stand 10 minutes. Add basil, salt and pepper. Serve at room temperature.
