Cheesy Beef and Vegetables

1 pound ground beef
1 small onion, chopped
2 garlic cloves, minced
1 can (14-1/2 ounces) tomatoes, undrained and chopped
1 can (4 ounces) mushroom stems and pieces, undrained
1 can (15-1/4 ounces) corn, drained
1/2 teaspoon salt
1/4 teaspoon pepper
8 ounces shredded Monterey Jack cheese
1 package (12 ounces) hot cooked noodles
In a large skillet, brown beef in small amount of oil. Add onion and garlic; cook until onion is tender, stirring
constantly. Add tomatoes, mushrooms, corn, salt and pepper. Simmer for 15 minutes.
Stir in hot noodles. Top with shredded cheese. Cover and simmer until cheese is melted. Serve immediately.
Yield: 4 to 6 servings.
