Apple Sauce Deluxe

1 package (3 ounces) raspberry or cherry-flavored gelatin
1 cup boiling water
1-1/2 cups (15-ounce jar) applesauce
1 teaspoon lemon juice
Sour cream or mayonnaise, if desired

Dissolve gelatin in boiling water. Blend in applesauce and lemon juice. Pour into serving dish or individual
molds. Chill until firm. Serve with sour cream or mayonnaise, if desired. Makes about 2-1/2 cups or 4 or 5
servings. May be doubled for larger amount.
Note:
May substitute 2 cups of cooked and sweetened rhubarb in place of applesauce. Omit lemon juice.
