Sweet Potato Casserole

Ingredients

3 tablespoons butter or margarine
3/4 teaspoon salt
1/4 cup orange juice
3 cups cooked, mashed sweet potatoes
1 can (9 ounces) crushed pineapple, drained (1 cup)
1 tablespoon butter or margarine
6 marshmallows, cut in halves

Instructions

Add the 3 tablespoons butter, salt and orange juice to sweet potatoes. Beat until light; fold in pineapple. Spoon potatoes into 1-quart casserole. Dot with 1 tablespoon butter or margarine and put marshmellows on top. Bake at 350 degrees until marshmellows are puffed and browned. Yield: 6 servings.
