Creamed Spinach

Ingredients

10-ounce package frozen chopped spinach
3-ounce package low-fat or fat-free cream cheese
1/2 teaspoon onion powder
1/8 teaspoon nutmeg
Pepper, to taste

Instructions

Prepare spinach according to package directions. Drain spinach well and add cream cheese, onion powder, nutmeg and pepper. Heat oven to 250 degrees F. Serve immediately. Spoon this recipe into hollowed-out tomatoes, artichoke bottoms or portabella mushrooms. These may be sprinkled with Parmesan cheese and a pat of butter and broiled until hot. Also good over scrambled eggs.
