Lima Bean Casserole

Ingredients

1 small onion
3 tablespoons margarine
1 can (6.5 ounces) mushrooms, drained
3 tablespoons flour
2 cups milk
1/4 pound soft cheese (like Velveeta)
20 ounces Forkhook lima beans
1/2 to 3/4 cup slivered almonds
Salt and pepper to taste

Instructions

Saute the onion in the margarine. Dredge mushrooms in the flour and add to onion. In a separate saucepan or double boiler, melt warm the milk, then add the cheese and stir until melted. Add the onions and mushrooms to cheese mixture. Cook the lima beans according to package instructions. Season with salt and pepper. Layer beans and cheese mixture in a 9x13-inch pan. Top with slivered almonds.May be kept in a low (250 degree) oven until ready to serve.
