Mark's Potato Pancakes

This is a traditional Hanukkah dish, called "Latkes" but it is a delicious side dish or breakfast dish on any occasion.

Ingredients

2 cups raw baking potatoes, grated
2 eggs, beaten
1 teaspoon salt
1 tablespoon flour or matzoh meal
1 pinch baking powder
1 onion, grated

Optional:
1 cup applesauce
1 cup apple butter or fruit jam
1 cup yogurt or sour cream

Instructions

Combine ingredients, in the order listed above, in a mixing bowl. Heat a griddle to 350 degrees, or grease a skillet and heat to medium high. Form potato mixture into patties, with lightly floured hands. Place patties onto griddle or skillet. Begin checking for browness after several minutes, and flip pancake patties when bottoms are brown. Remove pancakes from heat when brown on bottom. Serve with applesauce, apple butter, jam and yogurt or sour cream.
